Ok so I cheated on this dinner but I thought I do that a lot. Why not post easy great meals using some store bought short cuts. There is a lot of sodium in the Near East Pilaf and really all store bought rice blends so I do not salt anything else. If you want to use salt further by all means do so.
Total cost for 4 servings:
Bay Scallops $8.99 1 pound
Near East Rice Pilaf $1.99
1 Lemon $.79
Left over parsley $.25
Asparagus 3/4 lbs on sale $1.79
Hollandaise packs 2 each $3.00
Butter $.25

Bay scallop over pilaf with asparagus tips and sauce hollandaise
30 Minutes or less to prepare this easy weeknight gourmet dinner
Servings: 4 people
Cost: $17.00
Ingredients
- 1 Lbs Bay scallops
- 1 Each Lemon
- 2 Tbls Butter
- 1 Each Package Near East Rice pilaf
- 1 Cup Asparagus tips
- Zest from the lemon
- 1 Tbls Parsley chopped
- 2 Each Mellisa's single serve Hollandaise sauce
Instructions
- Prepare Pilaf according to directions on package
- At 10 Minutes into cooking rice add asapargus tips and lemon zest
- Heat SS or cast iron skillet to very hot add butter let brown for minute or two
- Add scallops and cook for four minutes turnign often .. pour off white discharge
- Microwave hollandaise 10 seconds
- Remove scallops from heat toss in parsley and juice from lemon
- Serve scallops atop rice and asapargus drizzle with hollandaise
