I need something to do with the fresh horseradish root I bought for the Dr.Pepper short rib recipe.
I googled some ideas for salad dressings and found a Martha Stewart recipe. This is adapted from that recipe. We are lucky in this area to have Bay water Farms hydroponic Bibb lettuce available in most grocery stores. They are located on the eastern shore of Maryland in Salisbury. I love their Bibb lettuce we sold it when I was at Sysco and I was fortunate enough to tour the farm.
Bibb salad with fresh horseradish dressing
Servings: 4 people
Ingredients
- 2 Head Bibb lettuce
- 2 Each Eggs
- 2 Tbls Toasted almond sliced
- 16 Slices English cucumber
- 1 Each Vine ripe tomato cut into small wedges
- Horseradish root dressing
- 1 Tsp White vinegar
Instructions
- Place eggs in saucepan cover with water an inch and a half higher then eggs
- Add 1 Tsp white vinegar
- Bring to boil
- Remove from heat let rest for 15 minutes
- Move eggs to ice water bath let cool 10 minutes
- Peel eggs and chop
- Wash bibb leaves and dry completely
- Place lettuce on plate arrange with tomato wedges cucumber slices and almonds top with egg crumbles
- Sprinkle horseradish root dressing over top and serve
Horseradish root dressing
Servings: 4 people
Ingredients
- 2 Tbls Fresh grated horseradish root grate on medium grater size
- 1 1/2 Tbls Sour cream
- 1 1/2 Tbls White wine vinegar
- 1 Tbls Dijon mustard
- 1 Tsp Honey
- Salt and Pepper
Instructions
- Combine all ingredients and allow to marry in refrigerator for minimum 30 minutes
