We stock stuffed buffalo chicken meatball and it is a hit every time I sample it to accounts. I decided to try my hand at a buffalo chicken meatball. I was very pleased with the results this was my first try and I am not sure I would change anything.
Buffalo Chicken Meatball
Servings: 16 meatballs
Ingredients
- 1 Lbs Ground chicken breast
- 1 Each Large egg Beaten
- 1/2 Cup Panko bread crumbs
- 1/4 Cup Grated carrot Grated on fine size not coarse
- 1/4 Cup Celery Minced
- 1 Tsp Garlic powder
- 3 Each Scallion Finely chopped
- 1/2 Cup Hot Sauce I prefer franks
- 3 Ounces Blue cheese crumbles
- 3 Tbls Butter
- 1 Tsp White wine vinegar
Instructions
- In a saucepan heat hot sauce, blue cheese, vinegar and butter. Stir over med heat until melted and incorporated. Remove from heat and let cool to room temp
- In large bowl mix chicken, panko, garlic powder, egg, carrot, celery and scallion
- Preheat oven to 425 Deg
- Once cooled add half the sauce to the chicken mixture fully incorporate
- Lightly oil glass baking dish and form 16 - 1 inch meatballs
- Bake for 16 minutes then top meatballs with remaining sauce. Bake 7 more minutes
- Serve
Notes
I made as entree with baked beans and cole slaw. In future though I will probably make slightly smaller meatballs as appetizer or party finger food.
