Cincinatti Chili.. Skyline as known by some

I love Chili and a local chain Hard Times Cafe serves 4 different kinds of chili. This is the first place I tried Cincinatti style and fell in love with it. So I researched and made several batches. The recipe I have added here is a result of a combination of those with the best I feel I came up with so far. This Chili does not taste anything like regular chili so be warned it is a totally different experience.
Cincinatti chili has no beans and the beef is boiled not browned. It is apparently served in Cincinatti always with spaghetti but the following ways:
1 way with shredded cheddar
2 way with diced onions and cheddar
3 way with onions, cheddar, and beans

Cincinatti Chili

Ingredients

  • 5 Cups Water
  • 6 Ounce Tomato Paste
  • 1 Ounce Bakers Chocolate
  • 1/4 Cup Chili Powder
  • 1 Tsp Cinnamon
  • 1 Each Bay leaf
  • 1 Tsp Garlic Powder
  • 1 Tsp Cumin
  • 1/4 Tsp Allspice
  • 1/4 Tsp Ground cloves
  • 1/4 Tsp Chili Flakes
  • 1/2 Tsp Sugar
  • 3 Tbls Cider Vinegar
  • 2 Tsp Worcestershire
  • 1 1/4 Lbs 93/7 Lean Ratio Ground beef

Instructions

  • Add water, paste, chocolate to dutch oven simmer and whisk
  • Add all other ingredients and crumble beef into pot
  • Bring to boil breaking up beef with whisk or spoon
  • Reduce heat to slow boil and simmer until reduced to stew consistency
  • Serve over spaghetti with whatever topping you prefer

This Chili is absolutely delicious on Hot Dogs!

  2. Michael, just reread the recipe for Cincinatti Chili but can’t find what “beef” you use or how you broil it. Can you advise I really want to try this! Thanks!

  3. Isabel, I used 93/7 organic grass fed ground beef. You add it to the water and boil it breaking it up as it boils.
