Country ham with Red Eye gravy and cheesy grits


Salty great for hang overs.. classically southern Red Eye gravy and country ham with grits!

Red Eye gravy and country ham with cheesy grits

Ingredients

  • 1 Lbs Country ham or sugar ham
  • 1 Cup Pork broth
  • 1/2 Cup Strong Coffee
  • 1 Tbls Hot sauce
  • 2 Tbls Butter
  • 3 Tbls Flour
  • 1 Tbls Sugar

Instructions

  • Sear country ham slices in cast iron skillet
  • Remove ham and add butter and flour lower heat cook until color of peanut butter
  • Slowly whisk in beef broth
  • Add coffee, hot sauce and sugar
  • Reduce by 1/3
  • Add ham simmer 5 minutes
  • Serve over grits with biscuits to sop up juice

Notes

This recipe is salty and it is meant to be.   You can reduce salt by immersing ham in cold water for 15 minutes ahead of time.

Ingredients

  • 1 Cup Milk
  • 1/4 Cup White grits
  • 2 Tbls Sharp Cheddar
  • 1 Tsp Salt

Instructions

  • Boil milk whisk in grits and salt
  • Stir in cheese
  • Reduce heat to low
  • Simmer covered 15 mintues
