Red Eye gravy and country ham with cheesy grits

Ingredients
- 1 Lbs Country ham or sugar ham
- 1 Cup Pork broth
- 1/2 Cup Strong Coffee
- 1 Tbls Hot sauce
- 2 Tbls Butter
- 3 Tbls Flour
- 1 Tbls Sugar

This recipe is salty and it is meant to be. You can reduce salt by immersing ham in cold water for 15 minutes ahead of time.
Quick Grits
I am not so enamered with grits that I go all out
Servings: 1
Ingredients
- 1 Cup Milk
- 1/4 Cup White grits
- 2 Tbls Sharp Cheddar
- 1 Tsp Salt
Instructions
- Boil milk whisk in grits and salt
- Stir in cheese
- Reduce heat to low
- Simmer covered 15 mintues
