My brother in law Jason spent a lot of time in New Mexico and loves his Hatch Chile’s this dip is great. I can attest just shared it recently at my Nephews Confirmation.
Hatch Green Chile Chicken Tip
Ingredients
- 6 Each Hatch Green Chile Big Jims not canned
- 2 Cups Sour Cream
- 1 Cup Cream Cheese
- 1 Each Whole Chicken Roasted Pulled meat and shredded
- 1 Cup Corn
- 1 Cup Mont Jack/ Cheddar shred cheese
Instructions
- Roast Chiles at 375 Deg Oven for 30 Minutes
- Remove from oven and put in bowl cover with saran wrap sweat for 10 minutes
- Peel skin should come right off
- Mix sour cream, cream cheese, shredded chicken, corn and chiles
- Place in cast iron skillet top with 1 cup Cheddar/jack shredded cheese
- Bake at 250 Deg for 30 Minutes
