Hatch Green Chile Dip

My brother in law Jason spent a lot of time in New Mexico and loves his Hatch Chile’s this dip is great. I can attest just shared it recently at my Nephews Confirmation.

Hatch Green Chile Chicken Tip

  • 6 Each Hatch Green Chile Big Jims not canned
  • 2 Cups Sour Cream
  • 1 Cup Cream Cheese
  • 1 Each Whole Chicken Roasted Pulled meat and shredded
  • 1 Cup Corn
  • 1 Cup Mont Jack/ Cheddar shred cheese


  • Roast Chiles at 375 Deg Oven for 30 Minutes
  • Remove from oven and put in bowl cover with saran wrap sweat for 10 minutes
  • Peel skin should come right off
  • Mix sour cream, cream cheese, shredded chicken, corn and chiles
  • Place in cast iron skillet top with 1 cup Cheddar/jack shredded cheese
  • Bake at 250 Deg for 30 Minutes
