Italian wedding soup with mini turkey meatballs and tortellini


I found a recipe for this a couple years ago I forget where but I have altered it over the years. The entire family agrees now the final recipe is a go to weeknight meal. The key is to make small meatballs and only add the amount of tortellini you will serve immediately. Finally I put the baby spinach in the bowls then pour in soup because leftovers are gross with 2 day soaked spinach.

Italian wedding soup stock

Ingredients

  • 1 Qt Los sodium vegetable stock
  • 1 Qt Low sodium chicken stock
  • 1 Each Onion Minced
  • 1 Each Large carrot Diced
  • 1 Each Celery stalk Diced
  • 1 Tbls Garlic powder
  • 1 Tbls Fresh parsley Chopped
  • 1/2 Cup Dry white wine
  • Salt and pepper To taste
  • Fresh tortellini Only add what you will serve that meal

Instructions

  • Add all ingredents simmer reduce by 1/3
  • Add tortellini 7 minutes before serving. Only add the amount of tortellini you will serve right away leftover are gross with 2 day old soaked tortellini

Mini turkey meatballs

Ingredients

  • 1 Lbs Ground turkey 90/10
  • 2 Tbls Grated onion
  • 1 Each Large egg
  • 1/2 Cup Fresh bread crumbs
  • 2 Each Garlic clove Pressed
  • 1 Tsp Dry basil
  • 1 Tsp Dry parsley
  • 1 Tbls Parmesean Grated
  • Salt and pepper To taste

Instructions

  • Pre heat oven to 350 deg
  • Combine all ingredients mix completely
  • Heat olive oil in dutch oven
  • Add 1/2 hand rolled meatballs tuning until just browned remove add to baking sheet
  • Bake at 350 deg 15 minutes

Notes

I add meatballs only as needed for the meal at hand.  Freeze the rest or use for another meal in a couple days
