I love Vindaloo! I have never tried to make it but my cousin Kristin has sure fire recipe she makes all the time. I am going to make over the weekend. Here is her recipe:
Pork Vindaloo
Servings: 6
Ingredients
- 3 Lbs Pork Shoulder trimmed of fat then cubed 1"
- 1/2 Cup Canola oil
- 2 Each Onions
- 8 Cloves garlic
- 2 inch Pieces Ginger grated
- 1.5 Tsp Cayenne
- 1.5 Tsp Mustard Seeds
- 1.5 Tsp Cumin
- 1.5 Tsp Tumeric
- 1/2 Tsp Cinnamon
- 1 Pinch Cloves
- 1/3 Cup White wine vinegar
- 1 Cup Chicken Stock
Instructions
- Place pork cubes in bowl and toss with salt and pepper
- Working in batches in enameled dutch oven brown in canola oil
- Set asiide pork.
- Sautee onions until brown
- Add Garlic ginger cayenne mustard cumin paprika turmeric cinnamon and cloves sautee for 1 Minute do not burn
- Add white wine vinegar and chicken stock de glaze
- Cook 5 mintues then add pork back in
- Cover and simmer for 2 hours

You can do in crock pot and slow cook on low for 6 hoursĀ
