New England Lobster Rolls

Ingredients

  • 2 Live Lobsters 1.5 lbs is best size
  • 1/4 Cup Mayo Good brand like Dukes or Hellmans
  • 2 Dash Hot Sauce
  • 1/2 Tsp Dry Tarragon
  • 1 Tbls Lemon Juice
  • 1/4 Cup Chives Minced
  • 1/4 Cup Celery Minced
  • 1/4 Tsp White Pepper
  • 2 Tbls Salt
  • 10 Cups Water
  • 4 Each New England Hot Dog Buns
  • 1 Tbls Butter or Mayo

Instructions

  • Bring 10 Cups of Water and the 2 Tbls salt to a rolling boil
  • Put lobsters into boiling water loosely cover
  • For 1 1/2 pound lobster boil roughly 12 minutes
  • Remove Lobsters and immediately place in ice water bath let cool
  • Mix Mayo, Lemon Juice, Tarragon, Chives, Celery, White pepper and hot sauce in bowl
  • Remove Lobster meat from claws and tails and chop into 1 inch pieces
  • Toss lobster meat in mayo mixture to coat refrigerate for a few minutes
  • Spread butter, margarine or mayo on outside of buns and toast
  • Top buns with lobster mixture and serve

Notes

The yield of live lobsters is about 25% meat.  You can also buy frozen lobster meat if live lobster are not available. I did two lobsters that weighed in at 3 pounds today and it made 4 perfect size sandwhich.
