Stumbled on a similar recipe when looking for potato side dishes. Made a few adjustments and absolutely loved it. They will be a regular side dish in my rotation from now on. Very easy to make!
Potato Pickle Chips
Servings: 2 People
Ingredients
- 2 Each Large Russet Potato
- 2 Cups Pickle Juice
- 1 Tbls Olive Oil
- 1/2 Tsp Pepper
- 1/2 Tsp Salt
- 1/2 Tsp Onion Powder
- 1/2 Tsp Garlic Powder
- 1/2 Tsp Dill
- 1/2 Tsp Paprika
Instructions
- Slice potatos into 1/8" slices and fully submerge in pickle juice. Cover and marinade minimum 3 hours.
- Pre heat oven to 400 degrees
- Remove potato slices from juice and dry throughly
- Mix oil and spices together in mixing bowl
- Toss potato slices in oil adn spices until fully covered
- Lay potato slices in single layer on baking sheet careful not to have any overlapping
- Bake about 20 minutes and flip once bottom is golden brown
- Keep an eye out to make sure they do not burn
