Whisk Eggs with 1 tbls water and hot sauce
Mix Flour, Pepper, Garlic Powder, Paprika, and Onion Powder until well combined
Heat 2 inches of oil in cast iron skillet or large pan to 350 Degrees
Coat each pork chop in the flour and spices until completely covered, the dredge in the eggs until coated, then again in flour and place immediately into oil.
Fry until nicely browned on both sides. If not serving immediately black on baking rack and put in warm oven. Best if served immediately however
While pork chops are cooking make the gravy. Serve atop Mashed potatoes with gravy
