Pork Vindaloo

Ingredients

  • 3 Lbs Pork Shoulder trimmed of fat then cubed 1"
  • 1/2 Cup Canola oil
  • 2 Each Onions
  • 8 Cloves garlic
  • 2 inch Pieces Ginger grated
  • 1.5 Tsp Cayenne
  • 1.5 Tsp Mustard Seeds
  • 1.5 Tsp Cumin
  • 1.5 Tsp Tumeric
  • 1/2 Tsp Cinnamon
  • 1 Pinch Cloves
  • 1/3 Cup White wine vinegar
  • 1 Cup Chicken Stock

Instructions

  • Place pork cubes in bowl and toss with salt and pepper
  • Working in batches in enameled dutch oven brown in canola oil
  • Set asiide pork.
  • Sautee onions until brown
  • Add Garlic ginger cayenne mustard cumin paprika turmeric cinnamon and cloves sautee for 1 Minute do not burn
  • Add white wine vinegar and chicken stock de glaze
  • Cook 5 mintues then add pork back in
  • Cover and simmer for 2 hours

You can do in crock pot and slow cook on low for 6 hoursĀ
