Buffalo Chicken Meatball

  • 1 Lbs Ground chicken breast
  • 1 Each Large egg Beaten
  • 1/2 Cup Panko bread crumbs
  • 1/4 Cup Grated carrot Grated on fine size not coarse
  • 1/4 Cup Celery Minced
  • 1 Tsp Garlic powder
  • 3 Each Scallion Finely chopped
  • 1/2 Cup Hot Sauce I prefer franks
  • 3 Ounces Blue cheese crumbles
  • 3 Tbls Butter
  • 1 Tsp White wine vinegar


  • In a saucepan heat hot sauce, blue cheese, vinegar and butter. Stir over med heat until melted and incorporated. Remove from heat and let cool to room temp
  • In large bowl mix chicken, panko, garlic powder, egg, carrot, celery and scallion
  • Preheat oven to 425 Deg
  • Once cooled add half the sauce to the chicken mixture fully incorporate
  • Lightly oil glass baking dish and form 16 - 1 inch meatballs
  • Bake for 16 minutes then top meatballs with remaining sauce. Bake 7 more minutes
  • Serve


I made as entree with baked beans and cole slaw. In future though I will probably make slightly smaller meatballs as appetizer or party finger food.
