1/4CupGrated carrot Grated on fine size not coarse
1/4CupCelery Minced
1Tsp Garlic powder
3Each ScallionFinely chopped
1/2 Cup Hot Sauce I prefer franks
3OuncesBlue cheese crumbles
3Tbls Butter
1Tsp White wine vinegar
Instructions
In a saucepan heat hot sauce, blue cheese, vinegar and butter. Stir over med heat until melted and incorporated. Remove from heat and let cool to room temp
In large bowl mix chicken, panko, garlic powder, egg, carrot, celery and scallion
Preheat oven to 425 Deg
Once cooled add half the sauce to the chicken mixture fully incorporate
Lightly oil glass baking dish and form 16 - 1 inch meatballs
Bake for 16 minutes then top meatballs with remaining sauce. Bake 7 more minutes

Notes
I made as entree with baked beans and cole slaw. In future though I will probably make slightly smaller meatballs as appetizer or party finger food.
