  • 1 Lbs Veal cutlets Prefer 2 large or 4 smaller
  • 4 Ounce Sliced gruyere
  • 4 Ounce Sliced black forest ham
  • 1/2 Cup Flour
  • 1/2 Tsp Allspice
  • 1/2 Tsp Nutmeg
  • 1/2 Tsp Pepper
  • 1/2 Tsp Salt
  • 2 Each Large eggs
  • 1 Tsp Hot sauce
  • 1 Cup Bread crumbs


  • Pre Heat oven to 350 degrees
  • Prep 3 bowls.. one with eggs and hot sauce stirred. One with Flour salt, pepper, allspice and nutmeg stirred. Finally one with bread crumbs
  • Pound veal cutlets to 1/8" thick. Layer cutlet with one ounce ham and one ounce gruyere then lay second on top
  • Dredge "veal sandwhich" through flour completely covering
  • Dredge through egg wash completely
  • Cover completely with bread crumbs
  • Place on wire baking rack and refrigerate for 30 minutes
  • In cast iron skillet bring canola oil up to temp almost to smoking
  • Add Veal sandwiches and pan fry on both sides until golden about 3 minutes per side
